Background on Mocha Java Coffee:

Coffee beans were originally exported from Mocha, a Yemenite city on the Red Sea that became a coffee port of international importance when Yemen was under Ottoman rule. The name of the town became associated with the area's stimulating drink and the beans from which it is brewed. In fact, the words coffee and cafe also come from the Arabic word qahwah.

When coffee arrived in Europe, chefs realized that the deep brown brew was great not only to drink, but also to flavor sweet finales to festive dinners. They named their desserts mocha or moka to evoke the main ingredient's exotic background. Gateau moka, the renowned Parisian patisserie specialty composed of layers of light genoise sponge cake and coffee buttercream, appealed to us from our first bite.
