Brewing The Perfect Cup
Use cold tap water. If the water in your area is hard, or has unsavory chemicals and odors, use filtered or bottle water.

Make sure the teapot is clean.

Pre-heat the teapot with hot water before brewing. Let sit for several minutes.

A round or squat tea-pot is preferred, which allows for a larger infusion area.

Brew with water heated to rolling boil, or just slightly below boiling.

Brewing time is dependent on:

- Size of the leaf: smaller leaves require a shorter brew time; larger leaves a longer brew time.

- Your personal preference in taste strength. Generally, 5 minutes will bring out the full strength and flavor of the tea.

Brewed tea should be gently stirred before serving as the major strength of the tea is in the bottom of the pot.

Use a tea cozy to cover the tea pot. This will help to keep the tea hotter, longer.

loose leaf tea vs. Pouch:

Pouches are obviously very convenient and are therefore preferred by the buying public. But when compared side-by-side, tea brewed in pouches are a pale comparison to loose leaf tea.

Brewing with loose tea leaves:

Add a teaspoon of tea leaves per cup to be brewed.

Follow the same procedure as above.

Pour the brewed tea into the cup through a tea strainer.

Enjoy!
