Why the one-way valve plays an important part in maintaining the freshness of coffee.

The packaging of coffee took a major step forward with the introduction in the early 1980’s of the one-way valve. 

Prior to the one-way valve, the procedure for the roasting and packaging of coffee beans involved having to allow the beans to cool and “gas off”. The still freshly roasted coffee beans emit gases and continue to do so for some considerable time after.  If the beans were immediately packaged, these emitting gases would cause the bag to expand and eventually explode.

So roasters, for a 24-hour period after roasting, had to let the beans cool and allow all the gases to escape.  Of course, there was a certain amount of deterioration taking place as the beans were being exposed to oxygen.  Air is the enemy of roasted coffee beans.

The one-way valve, by allowing the gases to escape from the bag, permits the roaster to almost immediately package the fresh roasted coffee.  As an important added benefit, the gases escaping the bag through the valve, forces any harmful air out of the bag.

This is what Kenneth Davids, a world-renowned authority on coffee, says in his book “Coffee – A Guide to Buying, Brewing and Enjoying 5th edition”, about keeping coffee fresh for an extended period of time.  “Putting beans in the refrigerator is downright foolish, even if you use an airtight container. The beans will pick up unwanted flavors and the moisture created is harmful.

Freezing, however, is an excellent way to preserve whole bean coffee.  Put the bag in a part of the freezer that does not lose temperature every time you open the door,” 

In other words, well down and away from the door or covering lid.

Now, the final step:
